Semifreddo A semi-frozen dessert with a mousse-like texture

Semifreddo, which means “half-cold” in Italian, is a delightful frozen dessert that has the texture of a mousse or frozen custard. Unlike ice cream, semifreddo does not require churning, making it an easy and elegant dessert to prepare at home. It is traditionally made with eggs, sugar, and cream, and can be flavored with a variety of ingredients such as chocolate, coffee, nuts, or fruit. Semifreddo is light, creamy, and smooth, often served in slices and enjoyed as a refreshing treat, especially during warmer months.

How to Make Semifreddo

Ingredients:

For the Base:

  • 3 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

For Flavoring:

  • 1/2 cup crushed cookies, chocolate chips, or chopped nuts (optional)
  • 1/4 cup liqueur like Amaretto or coffee (optional)

Instructions:

  1. Prepare the Egg Yolks:

    • In a large bowl, whisk the egg yolks and half of the sugar together until the mixture is pale and thick. Stir in the vanilla extract and any optional liqueur for flavoring.
  2. Whip the Cream:

    • In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip, as the cream should remain light and airy.
  3. Beat the Egg Whites:

    • In another clean bowl, beat the egg whites with the remaining sugar until stiff peaks form.
  4. Fold Ingredients Together:

    • Gently fold the whipped cream into the egg yolk mixture until combined. Then, carefully fold in the beaten egg whites, ensuring the mixture remains light and airy. If desired, fold in the crushed cookies, chocolate chips, or nuts.
  5. Freeze the Semifreddo:

    • Pour the mixture into a loaf pan or individual serving cups lined with plastic wrap. Cover with plastic wrap and freeze for at least 4-6 hours, or until firm.
  6. Serve:

    • To serve, remove the semifreddo from the freezer and let it sit for a few minutes at room temperature. Slice and serve as is, or garnish with fresh fruit, chocolate sauce, or additional crushed cookies.
