Biscotti Crunchy, twice-baked cookies traditionally flavored with almonds, often dipped in coffee or Vin Santo, a sweet Italian dessert wine

Biscotti, also known as cantucci, are traditional Italian cookies that originated in the region of Tuscany. The name “biscotti” comes from the Latin word “biscoctus,” meaning “twice-baked.” This twice-baking process gives biscotti their signature crunchy texture, making them perfect for dipping in coffee, tea, or wine. Biscotti are typically made with almonds, but can be flavored with various nuts, dried fruits, or even chocolate. They are a popular treat in Italy and are often enjoyed during holidays or as an everyday snack.

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 cup almonds, toasted and coarsely chopped (or other nuts)
  • Zest of 1 orange (optional)

Instructions:

  1. Prepare the Dough:

    • Preheat your oven to 350°F (175°C).
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a separate bowl, beat the eggs, vanilla extract, and almond extract (if using) until well combined.
    • Add the wet ingredients to the dry ingredients and mix until a dough forms.
    • Fold in the chopped almonds and orange zest (if using) until evenly distributed.
  2. Shape and Bake:

    • Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide. Place the logs on a parchment-lined baking sheet.
    • Bake for 25-30 minutes, or until the logs are lightly golden and firm to the touch.
    • Remove from the oven and let the logs cool for about 10 minutes. Reduce the oven temperature to 300°F (150°C).
  3. Slice and Bake Again:

    • Once the logs are cool enough to handle, use a sharp serrated knife to slice them diagonally into 1/2-inch thick slices.
    • Arrange the slices cut side down on the baking sheet.
    • Bake for an additional 10-15 minutes on each side, or until the biscotti are dry and crisp.
    • Let the biscotti cool completely on a wire rack.
  4. Serve:

    • Biscotti can be enjoyed as is, or dipped in coffee, tea, or dessert wine. They can also be dipped in melted chocolate for an extra treat.
