Instructions:

  1. Cook the Beets:

    • Wash the beets thoroughly and trim the ends.
    • Boil the beets in a large pot of water for about 30-40 minutes, or until they are tender when pierced with a fork.
    • Alternatively, you can roast the beets in the oven at 200°C (400°F) for about 1 hour.
    • Once cooked, let the beets cool slightly, then peel off the skin using your hands or a vegetable peeler.
  2. Prepare the Salad:

    • Grate the peeled beets using a coarse grater or slice them into thin rounds or matchsticks.
    • Place the grated or sliced beets in a large bowl.
  3. Make the Dressing:

    • In a small bowl, whisk together the oil, vinegar, minced garlic, salt, and black pepper.
    • Pour the dressing over the beets and toss to combine.
  4. Chill and Serve:

    • Let the salad sit for at least 15 minutes to allow the flavors to meld.
    • Garnish with fresh parsley, if desired.
    • Serve the salad chilled or at room temperature.
