Pečene Paprike, or roasted peppers, is a beloved dish in Serbian cuisine, often served as an appetizer or side dish. The peppers are typically roasted until their skins are charred, then peeled and marinated with garlic, vinegar, and oil. Ingredients:

  • 8 large red bell peppers (or a mix of red and yellow peppers)
  • 4 cloves garlic, thinly sliced
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Roast the Peppers:

    • Preheat your oven to 220°C (425°F).
    • Place the whole peppers on a baking sheet lined with parchment paper.
    • Roast in the oven for about 25-30 minutes, turning them occasionally, until the skins are charred and blistered.
    • Alternatively, you can roast the peppers on an open flame on a gas stove, turning them until evenly charred.
  2. Steam and Peel:

    • Once roasted, immediately transfer the peppers to a large bowl and cover with plastic wrap or a lid. Let them steam for about 10 minutes. This will make the skins easier to peel.
    • After steaming, peel the skins off the peppers and remove the seeds and stems. Be careful not to rinse the peppers, as this can wash away some of the flavor.
  3. Marinate the Peppers:

    • Slice the peeled peppers into strips and place them in a bowl.
    • Add the sliced garlic, olive oil, red wine vinegar, and salt. Toss everything together to coat the peppers evenly.
    • Let the peppers marinate for at least 30 minutes before serving. They can also be refrigerated and enjoyed later.
  4. Serve:

    • Serve the roasted peppers as a side dish, appetizer, or part of a mezze platter.
    • Garnish with fresh parsley if desired.
