Barena Boranija is a traditional Serbian dish made with tender green beans, slowly stewed with onions, garlic, and sometimes tomatoes. This dish is a staple in Serbian households, especially during the summer when fresh green beans are abundant. It’s simple, nutritious, and can be served as a side dish or a light main course.

Ingredients:

  • 500g (1 lb) green beans, trimmed and cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil or lard
  • 1 large tomato, peeled and chopped (optional)
  • 1 tsp paprika (optional)
  • Salt and pepper to taste
  • Water or vegetable broth, enough to cover the beans
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Ingredients:

    • Trim the green beans, removing the ends, and cut them into 2-inch pieces.
    • Finely chop the onion and mince the garlic.
  2. Sauté the Onions and Garlic:

    • Heat the oil or lard in a large pot over medium heat.
    • Add the chopped onions and sauté until they become soft and translucent, about 5 minutes.
    • Add the minced garlic and sauté for another minute, being careful not to burn the garlic.
  3. Add the Beans:

    • Add the green beans to the pot and stir them with the onions and garlic.
    • If using tomatoes, add them now along with the paprika (if desired).
  4. Cook the Beans:

    • Pour enough water or vegetable broth into the pot to just cover the beans.
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover the pot and let the beans simmer for about 30-40 minutes, or until they are tender and the liquid has reduced.
    • Season with salt and pepper to taste.
  5. Serve:

    • Once the beans are cooked, remove the pot from the heat.
    • Garnish with fresh parsley if desired.
    • Serve Barena Boranija warm, either as a side dish or a light main course.
