  • 1 bell pepper, chopped
  • 1 cup green peas (fresh or frozen)
  • 1 cup homemade or store-bought egg noodles or small pasta shapes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken:

    • Rinse the chicken pieces under cold water and remove any excess fat or skin if desired.
    • In a large pot, place the chicken pieces and cover them with water (about 10-12 cups). Bring to a boil over medium-high heat.
    • Once boiling, reduce the heat to low and skim off any foam or impurities that rise to the surface. This helps create a clear and clean broth.
  2. Cook the Chicken:

    • Add the quartered onions, bay leaves, dried thyme, and dried parsley to the pot.
    • Cover and let the chicken simmer for about 1 to 1.5 hours, or until the meat is tender and fully cooked.

    • Carefully remove the chicken from the pot and set aside to cool slightly.

  4. Prepare the Vegetables:

    • In a separate pan, heat the vegetable oil over medium heat.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
    • Add the sliced carrots, celery, and parsnips (if using), and cook for about 5 minutes, stirring occasionally.
    • Transfer the sautéed vegetables to the pot with the chicken broth.
  5. Add Remaining Ingredients:

    • Add the diced potatoes, chopped bell pepper, and green peas to the pot.
    • Bring the soup back to a gentle simmer and cook for another 15-20 minutes, or until the vegetables are tender.
  6. Add the Shredded Chicken and Noodles:

    • Return the shredded chicken to the pot.
    • Add the egg noodles or pasta and cook according to the package instructions, usually about 8-10 minutes, until the noodles are tender.
  7. Season the Soup:

    • Taste the soup and adjust the seasoning with salt and pepper as needed.
    • Remove the bay leaves before serving.
  8. Serve:

    • Ladle the Pileća Supa into bowls.
    • Garnish with freshly chopped parsley or dill if desired.
