Tulumba A deep-fried pastry soaked in sugar syrup, similar to churros, popular in the Balkans

Tulumba is a popular Balkan dessert that features deep-fried dough pastries soaked in a sweet syrup. Originating from the Ottoman Empire, this treat is well-loved in Serbia and other countries in the region. The dough is piped through a star-shaped nozzle to create ridged shapes, then fried until golden and crisp. After frying, the pastries are drenched in a sugary syrup that makes them sweet and moist. Tulumba is known for its satisfying crunch on the outside and soft, syrup-soaked interior. It’s a favorite at festive occasions and as a sweet end to a meal.

Ingredients:

For the Dough:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 3 large eggs

For the Syrup:

  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)

For Frying:

  • Vegetable oil, for frying

Instructions:

  1. Prepare the Syrup:

    • In a saucepan, combine sugar and water. Bring to a boil, stirring until the sugar dissolves.
    • Reduce heat and let the syrup simmer for about 10 minutes.
    • Stir in lemon juice and vanilla extract if using. Remove from heat and let it cool.
  2. Prepare the Dough:

    • In a medium saucepan, bring water and butter to a boil over medium heat.
    • Once boiling, remove from heat and quickly stir in the flour and baking powder until a dough forms.
    • Allow the dough to cool slightly before adding the eggs one at a time, mixing well after each addition until the dough is smooth and shiny.
  3. Shape and Fry:

    • Heat vegetable oil in a deep frying pan or pot to 180°C (350°F).
    • Transfer the dough to a piping bag fitted with a star-shaped nozzle.
    • Pipe the dough into 4-inch long strips directly into the hot oil, cutting them off with scissors or a knife.
    • Fry the Tulumba in batches until they are golden brown and crispy, about 3-4 minutes per batch.
    • Remove with a slotted spoon and drain on paper towels.
  4. Soak in Syrup:

    • While the Tulumba are still warm, dip them into the cooled syrup. Let them soak for a few minutes until well coated.
  5. Serve:

    • Let the Tulumba drain briefly before serving. Enjoy as a sweet treat with coffee or tea.
