Ingredients:

For the Sponge Cake:

  • 6 large eggs

  • 500 ml (2 cups) milk
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 100g (3.5 oz) butter

For the Chocolate Glaze:

  • 200g (7 oz) dark chocolate
  • 100 ml (1/2 cup) heavy cream

For Assembly:

  • 1 cup crushed walnuts or almonds (optional)

Instructions:

  1. Prepare the Sponge Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
    • In a mixing bowl, beat the eggs and sugar until light and fluffy. Add vanilla extract.
    • Sift together flour and baking powder, then gently fold into the egg mixture.
    • Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the sponge cake to cool completely before cutting into layers.
  2. Make the Cream Filling:

    • In a saucepan, heat the milk and sugar over medium heat until the sugar dissolves.
    • In a separate bowl, mix the flour and cocoa powder with a small amount of milk to form a smooth paste.
    • Gradually add this paste to the warm milk mixture, whisking constantly to avoid lumps.
    • Cook the mixture, stirring continuously, until it thickens. Remove from heat and stir in the butter and vanilla extract.
    • Allow the cream to cool slightly before using.
  3. Prepare the Chocolate Glaze:

    • In a heatproof bowl, melt the dark chocolate and heavy cream together over a pot of simmering water (double boiler method), or in the microwave in short intervals.
    • Stir until smooth and well combined.
  4. Assemble the Cake:

    • Slice the sponge cake into 2 or 3 layers.
    • Place one layer of cake on a serving plate. Spread a layer of cream filling on top. Sprinkle with crushed walnuts or almonds if using.
    • Repeat with additional layers of cake and cream.
    • Top the cake with the remaining cream filling and smooth the surface.
    • Pour the chocolate glaze over the top of the cake, spreading it evenly.
  5. Chill and Serve:

    • Refrigerate the cake for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
    • Serve chilled, and enjoy!
