Puslice Light and airy meringue cookies, often used as a topping for other desserts or enjoyed on their own

Puslice are light and airy meringue cookies that are beloved in many Serbian households. These delicate treats are made primarily from egg whites and sugar, resulting in a crisp exterior and a soft, slightly chewy interior. They are often served as a simple yet elegant dessert or as part of a festive cookie platter. Puslice can be enjoyed plain or with added flavors such as vanilla, almond, or a touch of lemon zest. Their simplicity and delicate sweetness make them a favorite treat for both children and adults.

Ingredients:

  • 4 large egg whites, at room temperature
  • 200g (7 oz) granulated sugar
  • 1 teaspoon vanilla extract or almond extract
  • A pinch of salt
  • Optional: A few drops of food coloring for a decorative touch

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 100°C (212°F). Line a baking sheet with parchment paper.
  2. Whip the Egg Whites:

    • In a clean, dry mixing bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat the egg whites on medium speed until soft peaks form.
  3. Add the Sugar:

    • Gradually add the sugar, one tablespoon at a time, while continuing to beat the mixture. Increase the speed to high and beat until the egg whites are glossy and form stiff peaks. The sugar should be fully dissolved.
    • Stir in the vanilla or almond extract, and add food coloring if desired, folding it in gently to avoid deflating the meringue.
  4. Shape the Meringues:

    • Using a spoon or a piping bag with a star nozzle, dollop or pipe small mounds of the meringue onto the prepared baking sheet. Leave space between each mound as they will expand slightly during baking.
  5. Bake the Meringues:

    • Place the baking sheet in the preheated oven and bake the meringues for 1.5 to 2 hours, or until they are dry and easily lift off the parchment paper. They should remain white and should not brown.
  6. Cool and Serve:

    • Turn off the oven and allow the meringues to cool completely in the oven with the door slightly ajar. Once cooled, they can be stored in an airtight container for up to a week.
