Ingredients:

  • 1-2 green chilies, slit (optional)
  • 1 bay leaf
  • Salt to taste
  • 1 tablespoon ghee (optional)
  • Fresh coriander leaves for garnish (optional)

Instructions:

  1. Prepare the Rice:

    • Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.
  2. Cook the Rice:

    • In a large pot, add the rice and water. Bring it to a boil over medium-high heat. Once it starts boiling, reduce the heat to low, cover the pot partially, and let the rice simmer.
  3. Optional: Add Vegetables and Spices:

    • If using, add the chopped potato, tomato, cumin seeds, green chilies, and bay leaf to the pot. Stir gently and continue to cook until the rice is very soft and the water has a soupy consistency. This can take around 25-30 minutes.
  4. Season and Finish:

    • Once the rice is fully cooked and the soup has reached the desired consistency, add salt to taste. If you prefer a richer flavor, you can stir in a tablespoon of ghee at this stage.
    • Remove from heat and discard the bay leaf. Garnish with fresh coriander leaves if desired.
  5. Serve:

    • Serve Bhaat ka Jhol hot, either on its own or with a side of pickles or yogurt. It can also be accompanied by a simple vegetable stir-fry or fried fish.
