  • 1 teaspoon cumin seeds

  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 cup plain yogurt
  • 2 tablespoons vegetable oil or ghee
  • 2 cups water or beef/lamb broth
  • A few fresh cilantro leaves for garnish
  • Salt to taste

Instructions:

  1. Prepare the Meat:

    • Heat the oil or ghee in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
    • Add the chopped onions and cook until they become golden brown.
  2. Cook the Aromatics:

    • Stir in the ginger-garlic paste and green chilies. Cook for another 2 minutes until fragrant.
    • Add the chopped tomatoes and cook until they soften and blend into the mixture.
  3. Add Spices and Meat:

    • Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
    • Add the meat chunks and cook for about 5-7 minutes, stirring occasionally, until the meat is browned.
  4. Simmer the Stew:

    • Stir in the yogurt and mix well.
    • Pour in the water or broth and bring to a boil.
    • Reduce the heat to low, cover, and let it simmer for about 45 minutes to 1 hour, or until the meat is tender and cooked through.
  5. Add Potatoes:

    • Add the potato chunks to the pot. Stir gently to combine with the meat and gravy.
    • Continue to simmer for another 20-30 minutes, or until the potatoes are cooked and tender.
  6. Finish and Serve:

    • Sprinkle garam masala over the stew and mix well.
    • Garnish with fresh cilantro leaves.
    • Serve hot with rice, naan, or roti.
