Khichdi is a simple, comforting, one-pot dish made with rice and lentils, and it’s often considered a staple in Indian households. Ingredients:

  • 1/2 cup rice (Basmati or any other variety)
  • 1/2 cup moong dal (yellow split lentils)
  • 1 small onion, chopped (optional)
  • 1 small tomato, chopped (optional)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon asafoetida (hing) (optional)
  • 1-2 green chilies, chopped (optional)
  • 1/2 inch ginger, grated
  • Salt to taste
  • 2 tablespoons ghee or oil
  • 4 cups water
  • Fresh coriander leaves for garnish

Instructions:

  1. Preparation:

    • Rinse the rice and moong dal under cold water until the water runs clear.
    • Soak them together in water for about 20-30 minutes, then drain.
  2. Cooking:

    • Heat ghee or oil in a pressure cooker or a large pot over medium heat.
    • Add cumin seeds and let them sizzle. If using, add asafoetida and sauté for a few seconds.
    • Add the chopped onions, green chilies, and ginger. Sauté until the onions turn golden brown.
    • Add the chopped tomatoes and cook until they soften.
    • Stir in turmeric powder and salt.
    • Add the drained rice and moong dal mixture to the pot and sauté for 2-3 minutes, allowing the flavors to mix well.
    • Pour in 4 cups of water, stir everything together, and bring it to a boil.
    • If using a pressure cooker, close the lid and cook for 2-3 whistles. If using a regular pot, cover and cook on low heat for about 20-25 minutes, stirring occasionally, until the rice and dal are fully cooked and have a soft, porridge-like consistency.
  3. Serving:

    • Once cooked, let the pressure release naturally if using a pressure cooker. Open the lid and gently fluff the khichdi.
    • Garnish with fresh coriander leaves and serve hot with yogurt, pickles, or a drizzle of ghee on top.
