Gulab Jamun Deep-fried dough balls soaked in sugar syrup, often flavored with cardamom and rosewater

Gulab Jamun is one of the most beloved Indian desserts, often served during festivals, weddings, and celebrations. These are deep-fried dough balls made from milk solids, which are then soaked in a fragrant sugar syrup flavored with rose water, cardamom, and sometimes saffron. The result is a sweet, soft, and syrupy treat that melts in your mouth.

Ingredients:

  • 1 cup khoya (milk solids)
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons milk (or as needed)
  • Ghee or oil for deep frying

For Sugar Syrup:

  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 1/2 teaspoon cardamom powder
  • 1 tablespoon rose water
  • Few saffron strands (optional)

Instructions:

  1. Prepare the Dough:

    • In a mixing bowl, combine khoya, all-purpose flour, baking soda, and cardamom powder.
    • Gradually add milk and mix until a soft dough forms. The dough should be smooth and slightly sticky.
    • Divide the dough into small, equal-sized balls. Ensure there are no cracks on the surface of the dough balls.
  2. Prepare the Sugar Syrup:

    • In a saucepan, combine sugar and water. Heat the mixture over medium heat until the sugar dissolves completely.
    • Add cardamom powder, rose water, and saffron strands (if using). Let the syrup simmer for about 5-7 minutes, then remove from heat and set aside.
  3. Fry the Dough Balls:

    • Heat ghee or oil in a deep frying pan over medium heat. Once hot, reduce the heat to low-medium.
    • Gently slide the dough balls into the hot oil. Fry them evenly on all sides until they turn golden brown. This should be done slowly to ensure they cook thoroughly without burning.
    • Remove the fried dough balls and drain the excess oil on paper towels.
  4. Soak in Syrup:

    • While the dough balls are still warm, place them in the prepared sugar syrup. Let them soak for at least 1-2 hours to absorb the syrup fully.
  5. Serve:

    • Serve the Gulab Jamun warm or at room temperature, garnished with chopped nuts or saffron strands, if desired.
