Malpua Deep-fried pancakes made from a batter of flour, milk, and sugar, soaked in syrup

Malpua is a traditional Indian dessert known for its rich flavor and delightful sweetness. These deep-fried pancakes are typically made during festivals and special occasions. The batter is prepared with flour, milk, and sugar, then flavored with cardamom and fennel seeds. After frying, the pancakes are soaked in sugar syrup, making them incredibly moist and sweet. Malpua is often served with rabri (thickened sweetened milk) to enhance its taste.


Ingredients:

For the Malpua Batter:

  • 1 cup all-purpose flour (maida)
  • 1/2 cup semolina (sooji)
  • 1/2 cup milk powder
  • 1 cup milk
  • 1/4 cup sugar
  • 1/2 teaspoon fennel seeds (saunf)
  • 1/4 teaspoon cardamom powder
  • Ghee or oil for frying

For the Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • A few strands of saffron (optional)
  • 1/4 teaspoon cardamom powder

Instructions:

  1. Prepare the Sugar Syrup:

    • In a saucepan, combine sugar and water. Heat over medium flame until the sugar dissolves completely.
    • Add saffron strands and cardamom powder, and let it simmer until the syrup reaches a one-string consistency. Set aside.
  2. Make the Malpua Batter:

    • In a large mixing bowl, combine all-purpose flour, semolina, and milk powder.
    • Gradually add milk while stirring to avoid lumps. The batter should be smooth and slightly thick.
    • Add sugar, fennel seeds, and cardamom powder to the batter. Mix well and let it rest for 15-20 minutes.
  3. Fry the Malpuas:

    • Heat ghee or oil in a deep frying pan over medium heat.
    • Pour a ladleful of batter into the hot ghee or oil, spreading it out slightly to form a small pancake.
    • Fry until the edges turn golden brown, then flip and fry the other side.
    • Remove the malpua from the oil and immediately dip it in the warm sugar syrup. Let it soak for a minute or two, then transfer to a plate.
    • Repeat with the remaining batter.
  4. Serve:

    • Serve Malpua warm, garnished with nuts or with a side of rabri for an indulgent treat.
