Ingredients:

  • 4 large potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 6 large eggs
  • ½ cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the potatoes and onions: Heat the olive oil in a large skillet over medium heat. Add the sliced potatoes and onions, cooking them slowly, stirring occasionally, until the potatoes are tender but not browned. This should take about 15-20 minutes.

  2. Drain excess oil: Once the potatoes and onions are tender, remove them from the skillet and drain them on a paper towel. Reserve a bit of the cooking oil for later.

  3. Whisk the eggs: In a large bowl, beat the eggs well, and season with salt and pepper. Add the cooked potatoes and onions into the egg mixture, stirring gently to combine.

  4. Cook the omelette: Heat a little of the reserved oil in the skillet over medium heat. Pour the egg, potato, and onion mixture into the skillet. Cook on low heat for about 6-8 minutes, until the bottom is set and golden.

  5. Flip the omelette: Carefully flip the tortilla by placing a large plate over the skillet, inverting the omelette onto the plate, then sliding it back into the skillet to cook the other side. Cook for another 4-5 minutes until fully set and cooked through.

  6. Serve: Once done, remove the tortilla from the skillet and let it cool slightly before slicing. Serve it warm or at room temperature, either as a snack or a meal.
