Vitel Toné – A dish of thinly sliced cold veal covered in a creamy sauce made from tuna, capers, and anchovies. This Italian-origin dish is a staple during Argentine Christmas and New Year's celebrations

Vitel Toné is a classic Argentine dish of Italian origin, traditionally served during the holiday season, especially for Christmas and New Year’s Eve meals. It consists of thinly sliced veal served cold and topped with a creamy, savory sauce made from tuna, anchovies, and mayonnaise. This dish, despite its simple preparation, has a luxurious flavor that combines the richness of the veal with the umami of the tuna sauce, making it a beloved appetizer.


Ingredients:

  • 1 kg veal eye of round or similar cut
  • 2 bay leaves
  • 1 carrot, chopped
  • 1 onion, chopped
  • 2 cloves garlic
  • Salt and pepper to taste

Tuna Sauce:

  • 1 can (200g) of tuna in oil, drained
  • 1 cup mayonnaise
  • ½ cup heavy cream
  • 3-4 anchovy fillets (optional)
  • 1 tablespoon capers, plus extra for garnish
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Cook the veal: In a large pot, place the veal, chopped onion, carrot, garlic, bay leaves, and enough water to cover the meat. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for about 1.5 to 2 hours, or until the veal is tender. Once cooked, remove the veal from the pot and let it cool completely.

  2. Slice the veal: Once the veal has cooled, slice it thinly. Arrange the slices on a serving platter, slightly overlapping each piece.

  3. Make the tuna sauce: In a blender or food processor, combine the drained tuna, mayonnaise, heavy cream, anchovy fillets (if using), capers, and lemon juice. Blend until smooth. Adjust seasoning with salt and pepper to taste.

  4. Assemble the dish: Pour the creamy tuna sauce over the sliced veal, making sure all the pieces are generously coated. Garnish with extra capers.

  5. Chill and serve: Refrigerate the Vitel Toné for at least 2 hours before serving, allowing the flavors to meld. Serve cold as an appetizer or main dish.
