Ingredients:

  • Beef Ribs: 1 kg
  • Chorizo Sausages: 4-6
  • Morcilas (Blood Sausages): 2-3 (optional)
  • Salt: to taste
  • Chimichurri Sauce: (optional, for serving)
    • 1 cup parsley, chopped
    • 4 cloves garlic, minced
    • 1/2 cup red wine vinegar
    • 1/2 cup olive oil
    • 1 tsp red pepper flakes
    • Salt and black pepper to taste

Instructions:

  1. Prepare the grill:

    • Preheat a barbecue grill or charcoal grill. Ensure the coals are hot and have a nice layer of white ash.
  2. Season the meat:

    • Generously season the beef ribs, chorizo, and morcilla with salt.
  3. Grill the meat:

    • Place the beef ribs on the grill, bone side down, and cook slowly over indirect heat. Turn occasionally to ensure even cooking. This can take about 1.5 to 2 hours depending on the heat and thickness of the meat.
    • Grill the chorizo and morcilla for about 20-30 minutes, turning frequently until they are nicely browned and cooked through.
  4. Prepare chimichurri (if using):

    • Combine the parsley, garlic, vinegar, olive oil, red pepper flakes, salt, and black pepper in a bowl. Mix well and let it sit for at least 30 minutes to allow the flavors to meld.
  5. Serve:

    • Slice the beef ribs and serve alongside the chorizo and morcilla. Provide chimichurri sauce on the side for those who wish to add some extra flavor.
