Choripán is a quintessential Argentine street food, consisting of a grilled chorizo sausage served in a crusty bread roll. Ingredients:

  • Chorizo Sausages: 4 (about 150g each)
  • Crusty Bread Rolls or Baguettes: 4
  • Chimichurri Sauce: (store-bought or homemade, recipe below)

For Chimichurri Sauce:

  • Fresh Parsley: 1 cup, finely chopped
  • Garlic: 3 cloves, minced
  • Red Wine Vinegar: 1/4 cup
  • Olive Oil: 1/2 cup
  • Red Pepper Flakes: 1/2 tsp
  • Oregano: 1 tsp
  • Salt: 1/2 tsp
  • Black Pepper: 1/2 tsp

Instructions:

  1. Prepare the Chimichurri Sauce:

    • In a bowl, combine the parsley, garlic, red wine vinegar, olive oil, red pepper flakes, oregano, salt, and black pepper. Mix well and set aside. Let the flavors meld while you prepare the chorizos.
  2. Grill the Chorizo Sausages:

    • Preheat the grill to medium-high heat.
    • Place the chorizo sausages on the grill and cook for about 4-5 minutes per side, or until they are fully cooked and have a nice charred exterior. The internal temperature should reach 70°C (160°F).
  3. Prepare the Bread Rolls:

    • While the chorizo is grilling, slice the bread rolls or baguettes in half lengthwise. Toast them lightly on the grill if desired.
  4. Assemble the Choripán:

    • Place each grilled chorizo inside a bread roll.
    • Spoon a generous amount of chimichurri sauce over the chorizo.
    • Serve immediately while hot.
