Instructions:

  1. Prepare the Crust:

    • In a large bowl, combine the flour and sugar. Add the chilled butter and use your fingers or a pastry cutter to mix until the texture resembles coarse crumbs.
    • Add the egg, vanilla extract, and lemon zest (if using). Mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  2. Prepare the Filling:

    • In a separate bowl, whisk together the ricotta, sugar, eggs, vanilla extract, lemon zest, and cornstarch (if using). Mix until smooth and well combined.
  3. Assemble the Tart:

    • Preheat the oven to 180°C (350°F). Roll out the dough on a floured surface and place it in a tart pan (about 24 cm in diameter). Press the dough into the pan and trim off any excess.
