Ingredients:

  • 3 medium potatoes, boiled and peeled
  • 1 tablespoon oil (for frying)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon chaat masala
  • 1/4 teaspoon red chili powder
  • 1/2 teaspoon black salt (or regular salt)
  • 2 tablespoons tamarind chutney
  • 2 tablespoons mint chutney
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, finely chopped (optional)
  • Fresh coriander leaves, chopped (for garnish)
  • 1 tablespoon pomegranate seeds (optional, for garnish)
  • 1 tablespoon sev (crunchy chickpea noodles, optional, for garnish)

Instructions:

  1. Prepare the Potatoes:

    • Cut the boiled potatoes into bite-sized cubes.
  2. Fry the Potatoes:

    • Heat oil in a pan over medium heat. Add the potato cubes and fry until they are golden and crispy. Remove the potatoes from the pan and drain them on paper towels to remove excess oil.
  3. Mix the Spices:

    • In a large mixing bowl, add the cumin powder, chaat masala, red chili powder, and black salt. Toss the fried potatoes in the spice mixture until they are evenly coated.
  4. Add the Chutneys:

    • Drizzle the tamarind chutney and mint chutney over the spiced potatoes. Mix well to ensure the chutneys coat the potatoes.
  5. Add Vegetables and Garnishes:

    • Add the chopped onion, tomato, and green chili (if using) to the potatoes. Toss everything together. Garnish with fresh coriander leaves, pomegranate seeds, and sev if desired.
  6. Serve:

    • Aloo Chaat is best served immediately while the potatoes are still crispy. Enjoy it as a snack or a side dish.
