Bajadera is a luxurious and popular dessert in the Balkans, known for its rich, layered texture and delightful combination of chocolate, nuts, and biscuits. This no-bake treat consists of two or more layers of a smooth, nutty base and a creamy chocolate topping, making it a favorite during holidays and special occasions. Ingredients:

  • 300g (10.6 oz) sugar
  • 200ml (6.8 fl oz) water
  • 150g (5.3 oz) butter
  • 150g (5.3 oz) ground walnuts or hazelnuts
  • 300g (10.6 oz) ground tea biscuits (digestive or graham crackers)
  • 100g (3.5 oz) dark chocolate, melted
  • 1 teaspoon vanilla extract

For the Chocolate Glaze:

  • 100g (3.5 oz) dark chocolate
  • 2 tablespoons butter

Instructions:

  1. Prepare the Sugar Syrup:

    • In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar is completely dissolved. Once the mixture starts to boil, remove it from the heat.
  2. Make the Base:

    • Add the butter to the hot sugar syrup and stir until melted and well combined.
    • Mix in the ground nuts, ground biscuits, and vanilla extract, stirring until the mixture is smooth and forms a thick dough-like consistency.
  3. Layer the Dessert:

    • Divide the mixture into two equal parts.
    • Press one part of the mixture into the bottom of a lined or greased rectangular baking dish to form the first layer.
    • Stir the melted chocolate into the remaining mixture to create the chocolate layer.
    • Spread the chocolate mixture evenly over the first layer.
  4. Prepare the Chocolate Glaze:

    • In a small saucepan, melt the dark chocolate and butter together over low heat until smooth. Pour the glaze over the top of the dessert, spreading it evenly.
  5. Chill and Set:

    • Refrigerate the dessert for at least 2-3 hours, or until fully set and firm.
  6. Serve:

    • Once set, cut the Bajadera into small, bite-sized squares or diamonds. Serve chilled and enjoy!
