Ingredients:
- 500g (1 lb) green beans, trimmed and cut into 2-inch pieces
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp vegetable oil or lard
- 1 large tomato, peeled and chopped (optional)
- 1 tsp paprika (optional)
- Salt and pepper to taste
- Water or vegetable broth, enough to cover the beans
- Fresh parsley for garnish (optional)
Instructions:
Prepare the Ingredients:
- Trim the green beans, removing the ends, and cut them into 2-inch pieces.
- Finely chop the onion and mince the garlic.
Sauté the Onions and Garlic:
- Heat the oil or lard in a large pot over medium heat.
- Add the chopped onions and sauté until they become soft and translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute, being careful not to burn the garlic.
Add the Beans:
- Add the green beans to the pot and stir them with the onions and garlic.
- If using tomatoes, add them now along with the paprika (if desired).
Cook the Beans:
- Pour enough water or vegetable broth into the pot to just cover the beans.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let the beans simmer for about 30-40 minutes, or until they are tender and the liquid has reduced.
- Season with salt and pepper to taste.
Serve:
- Once the beans are cooked, remove the pot from the heat.
- Garnish with fresh parsley if desired.
- Serve Barena Boranija warm, either as a side dish or a light main course.
