Cabbage Sabzi A lightly spiced stir-fry of cabbage with mustard seeds, turmeric, and other spices, often served as a side dish

Cabbage Sabzi is a simple and nutritious Indian stir-fry made with finely shredded cabbage and a blend of aromatic spices. This dish is popular in many Indian households and is often served as a side dish with rotis (Indian flatbreads) or rice. The light seasoning enhances the natural flavors of the cabbage while adding a touch of warmth and spice. Cabbage Sabzi is a healthy option, being low in calories and high in fiber, making it a great addition to a balanced meal.

Ingredients:

  • 1 medium cabbage, finely shredded
  • 1 tablespoon oil (vegetable or mustard oil)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon garam masala (optional)
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. Prepare the Cabbage:

    • Finely shred the cabbage and set it aside. Ensure the cabbage is clean and dry.
  2. Heat the Oil:

    • In a large pan or wok, heat the oil over medium heat. Add the cumin seeds and mustard seeds, allowing them to sizzle and pop for a few seconds.
  3. Add Spices and Chili:

    • Add the turmeric powder, coriander powder, and red chili powder to the pan. Stir the spices quickly to release their aroma. If using, add the chopped green chili at this stage for extra heat.
  4. Cook the Cabbage:

    • Add the shredded cabbage to the pan. Stir well to coat the cabbage with the spices. Cook on medium heat, stirring occasionally, until the cabbage is tender but still has a slight crunch. This should take about 10-12 minutes.
  5. Season and Finish:

    • Add salt to taste and, if desired, sprinkle garam masala over the cabbage. Stir well to combine. Cook for another 2-3 minutes to allow the flavors to meld.
  6. Garnish and Serve:

    • Garnish the Cabbage Sabzi with fresh coriander leaves. Serve hot as a side dish with rotis or as part of a larger meal.
