Caldo de Gallina is a classic Latin American chicken broth soup, often considered comfort food. It is made with hen (gallina), known for its richer flavor compared to regular chicken. This soup is traditionally served with hearty vegetables, noodles or potatoes, and sometimes a boiled egg, making it a wholesome and nourishing meal. It’s perfect for a cold day or when you need a comforting, homemade dish that’s packed with nutrients.

Ingredients:

  • 1 whole hen (gallina), cut into pieces (about 1.5-2 kg)
  • 2 liters water or chicken broth
  • 2 carrots, chopped
  • 2 medium potatoes, peeled and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 ears of corn, cut into rounds
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric (optional, for color)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • 100 gr noodles (optional)
  • 2 hard-boiled eggs, halved (optional)

Instructions:

  1. Prepare the Hen: In a large pot, add the hen pieces and cover with water or chicken broth. Bring to a boil, then reduce the heat and let it simmer. Skim off any foam or impurities that rise to the top.
  2. Add Vegetables: Once the broth is simmering, add chopped carrots, potatoes, onion, garlic, and corn rounds. Let it simmer gently for about 60-90 minutes, or until the hen is tender and fully cooked.
  3. Season the Broth: Add ground cumin, turmeric (if using), salt, and pepper. Taste and adjust the seasoning as needed.
  4. Cook Noodles (Optional): If using noodles, add them during the last 10 minutes of cooking, so they absorb the flavors of the broth.
  5. Boil Eggs (Optional): If adding boiled eggs, cook them separately, then peel and halve them to place in the soup before serving.
  6. Serve: Ladle the caldo into bowls, ensuring each bowl gets some hen pieces, vegetables, and broth. Garnish with fresh cilantro or parsley, and add boiled egg halves if desired.
