Ingredients:

  • 1/2 teaspoon ground cumin (optional)
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1/4 cup cold water
  • Vegetable oil for grilling

Instructions:

  1. Mix the Meat: In a large bowl, combine the ground meat with baking soda, minced garlic, paprika, salt, black pepper, cumin (if using), and cayenne pepper (if using). Mix well until the seasonings are evenly distributed.

  2. Add Water: Gradually add cold water to the meat mixture, mixing continuously until the mixture becomes slightly sticky and well combined. The water helps keep the ćevapi moist.

  3. Shape the Ćevapi: Divide the mixture into small portions and shape each portion into small, finger-sized sausages (about 4 inches long). Ensure they are all roughly the same size for even cooking.

  4. Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, lightly grease it with vegetable oil and heat over medium-high heat.

  5. Grill the Ćevapi: Place the ćevapi on the grill and cook for about 4-5 minutes per side, or until they are browned and cooked through. The internal temperature should reach 70°C (160°F). Turn them occasionally to ensure even grilling.

  6. Serve: Serve the ćevapi hot with somun, chopped onions, and ajvar. They can also be served with a side of salad or yogurt.
