Chicken Shorba A light, spiced chicken soup often flavored with ginger, garlic, and coriander

Chicken Shorba is a traditional Indian soup that is light, aromatic, and mildly spiced. This dish is often served as a starter or a comforting meal, especially during cold weather. The word “Shorba” is derived from the Arabic word “Shurbah,” meaning soup. In Indian cuisine, Shorba refers to a broth-based soup made with meat or vegetables, simmered with spices and herbs. Chicken Shorba, in particular, is a nutritious and flavorful soup made with tender chicken, garlic, ginger, and a blend of spices like cumin, coriander, and turmeric.

Ingredients:

  • 500g chicken (with bones for better flavor)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 4-5 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon garam masala
  • 6 cups water or chicken broth
  • 2 tablespoons oil or ghee
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. Sauté the Aromatics:

    • Heat oil or ghee in a large pot over medium heat. Add cumin seeds and let them splutter. Add the chopped onions and sauté until they turn golden brown.
  2. Cook the Spices and Tomatoes:

    • Add minced garlic and ginger, and sauté for another minute until fragrant. Then, add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil starts to separate.
  3. Add Chicken:

    • Add the chicken pieces to the pot and stir well to coat them with the spice mixture. Cook for about 5-7 minutes until the chicken is lightly browned.
  4. Simmer the Shorba:

    • Pour in the water or chicken broth and bring the mixture to a boil. Lower the heat, cover the pot, and let it simmer for 30-40 minutes, allowing the chicken to cook thoroughly and release its flavors into the broth.
  5. Add Final Seasoning:

    • Once the chicken is tender, add black pepper powder and garam masala. Stir well and let the soup simmer for another 5 minutes.
  6. Serve:

    • Remove the Chicken Shorba from heat. Garnish with fresh coriander leaves and serve hot with lemon wedges on the side. The soup can be enjoyed as is or with a side of bread or rice.
