Ingredients:

Instructions:

  1. Prepare the Beans:

    • Rinse the dried beans thoroughly and soak them in water overnight. The next day, drain and rinse the beans again.
  2. Cook the Beans:

    • Place the soaked beans in a large pot, cover with fresh water, and bring to a boil. Reduce the heat and simmer for about 1 hour, or until the beans are tender. Drain and set aside.
  3. Sauté the Vegetables:

    • In a large pot, heat the oil over medium heat. Add the chopped onion, garlic, and sliced carrots. Sauté until the onion is softened, about 5 minutes.
  4. Add the Smoked Meat:

    • Add the smoked sausage, ribs, or bacon to the pot. Cook for an additional 5 minutes, allowing the meat to release its flavors.
  5. Combine Ingredients:

    • Add the cooked beans to the pot, along with the bay leaf and paprika. Stir to combine, then add enough water to cover the ingredients by about an inch.
  6. Simmer the Soup:

    • Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1 hour. Stir occasionally to prevent sticking.
  7. Thicken the Soup (Optional):

    • If you prefer a thicker soup, mix the flour with a little water to create a slurry and stir it into the soup. Let it cook for an additional 5-10 minutes.
  8. Season and Serve:

    • Season the soup with salt and pepper to taste. Remove the bay leaf before serving. Garnish with fresh parsley and serve hot, with crusty bread on the side.
