Dal Tadka is a comforting and flavorful lentil soup, one of the most popular dishes in Indian cuisine. It is made from yellow lentils (often split pigeon peas or moong dal) that are cooked until soft and then tempered with ghee (clarified butter), aromatic spices, garlic, and sometimes tomatoes. This dish is known for its rich and creamy texture, paired with the vibrant flavors of the spices used in the tadka (tempering). Dal Tadka is typically served with steamed rice or Indian bread like naan or roti and is a staple in many Indian households.

Ingredients:

  • 1 cup yellow lentils (toor dal or moong dal)
  • 3 cups water
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, slit (optional)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp ghee (or oil)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 1 tsp lemon juice (optional)

Instructions:

  1. Cook the Lentils:

    • Rinse the lentils thoroughly under cold water. In a pressure cooker or a large pot, add the rinsed lentils, water, turmeric powder, and salt. Cook until the lentils are soft and mushy. If using a pressure cooker, it will take about 3-4 whistles; if using a pot, cook for 25-30 minutes on medium heat.
  2. Prepare the Tadka (Tempering):

    • In a pan, heat the ghee over medium heat. Add cumin seeds and let them splutter.
    • Add the minced garlic, ginger, and green chilies (if using). Sauté until the garlic turns golden brown.
    • Add the chopped onions and sauté until they become translucent.
    • Stir in the chopped tomatoes and cook until they turn soft and the oil starts to separate from the mixture.
    • Add the red chili powder and garam masala. Mix well and cook for another 1-2 minutes.
  3. Combine and Simmer:

    • Pour the prepared tadka into the cooked lentils. Mix well and let the dal simmer for an additional 5-10 minutes, allowing the flavors to meld together. If the dal is too thick, you can add a little water to reach your desired consistency.
  4. Finish and Serve:

    • Stir in lemon juice if using and garnish with fresh coriander leaves. Serve hot with steamed rice or Indian bread.
