Džuveč - A vegetable and rice dish cooked with tomatoes, peppers, onions, and sometimes meat, often served as a side

Džuveč is a traditional Balkan dish, particularly popular in Serbia, that features a savory combination of vegetables, rice, and meat. It’s a versatile, one-pot dish that varies from region to region, with different types of meat (such as chicken, pork, or lamb) and vegetables being used. The dish is often slow-cooked, allowing the flavors to meld together beautifully. It’s a comforting, hearty meal that is enjoyed throughout the year, especially in autumn when fresh vegetables are abundant.

Ingredients:

  • 500 g chicken or pork, cut into bite-sized pieces
  • 200 g rice (preferably medium-grain)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, peeled and chopped (or 200 g canned tomatoes)
  • 1 zucchini, diced
  • 100 g peas (optional)
  • 3 tbsp sunflower oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • 500 ml chicken or vegetable broth
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Meat:

    • Heat the sunflower oil in a large pot or Dutch oven over medium heat.
    • Add the pieces of chicken or pork to the pot and brown them on all sides. Once browned, remove the meat from the pot and set it aside.
  2. Cook the Vegetables:

    • In the same pot, add the chopped onion and sauté for 5-7 minutes until softened.
    • Add the minced garlic, sliced carrots, and diced bell peppers. Cook for another 5 minutes until the vegetables begin to soften.
    • Stir in the chopped tomatoes and zucchini, cooking for an additional 5 minutes.
  3. Combine Ingredients:

    • Return the browned meat to the pot, along with the rice. Stir everything together to coat the rice with the juices and flavors.
    • Add the paprika, salt, and pepper, and stir well.
    • Pour in the chicken or vegetable broth, making sure there is enough liquid to cover the ingredients.
  4. Cook the Džuveč:

    • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the rice is tender and has absorbed most of the liquid.
    • If using peas, add them during the last 10 minutes of cooking.
  5. Serve:

    • Once the Džuveč is cooked, garnish with fresh parsley, if desired.
    • Serve hot, either on its own or with a side of bread.
