Ensalada Rusa, also known as Russian Salad, is a widely enjoyed cold salad in Argentina and other parts of Latin America. It’s made with boiled potatoes, peas, carrots, and often mixed with mayonnaise, giving it a creamy texture. This salad is served as a side dish during meals, particularly at celebrations or barbecues (asados). Its mild flavors and refreshing nature make it a versatile complement to grilled meats or as part of a festive spread.


Ingredients:

  • 3 large potatoes, peeled and diced
  • 2 large carrots, peeled and diced
  • 1 cup frozen peas
  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: 2 hard-boiled eggs (chopped)

Instructions:

  1. Cook the vegetables: In a large pot, bring salted water to a boil. Add the diced potatoes and carrots, cooking them until they are tender but firm (about 8-10 minutes). Drain and set aside to cool.

  2. Prepare the peas: In the same pot, briefly boil the frozen peas for 2-3 minutes, until just cooked. Drain and let them cool.

  3. Mix the salad: Once the vegetables have cooled, place the potatoes, carrots, and peas in a large bowl. Add the mayonnaise, lemon juice, and season with salt and pepper. Stir gently until all ingredients are well combined. If using hard-boiled eggs, fold them into the salad.

  4. Chill and serve: Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld. Serve cold as a side dish.
