Ingredients:

  • 800 gr beef (chuck or brisket), cut into large cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 medium potatoes, chopped
  • 1 red bell pepper, chopped
  • 400 gr canned tomatoes, crushed
  • 250 ml beef broth
  • 125 ml red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Brown the Beef: Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef and set it aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onion, garlic, carrots, and bell pepper. Sauté for 5-7 minutes, or until the vegetables start to soften.
  3. Deglaze with Wine: Pour in the red wine, stirring to deglaze the pot and scrape up any browned bits from the bottom. Let the wine simmer for 2-3 minutes.
  4. Add the Tomatoes and Spices: Add the crushed tomatoes, tomato paste, paprika, cumin, and bay leaf to the pot. Stir well to combine.
  5. Simmer the Stew: Return the browned beef to the pot, along with the beef broth. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  6. Add Potatoes: About 30 minutes before the stew is done, add the chopped potatoes and continue cooking until the potatoes are tender.
  7. Season and Serve: Season the stew with salt and pepper to taste. Garnish with fresh parsley and serve hot with rice or bread.
