Gravče na Tiganj A Serbian bean dish made with beans, tomatoes, and spices, typically baked until the flavors meld together and served as a hearty main course.

Gravče na Tiganj is a traditional Serbian dish made with white beans that are cooked and then baked in a skillet or casserole dish with onions, garlic, and peppers. This dish is similar to the famous “Gravče na Tavče,” which is popular throughout the Balkans. The name “Gravče na Tiganj” translates to “beans in a skillet,” and it’s a hearty, comforting dish that is often served as a main course or as a side dish with meats. It’s particularly favored for its rich, savory flavor and its satisfying, filling nature.

Ingredients:

  • 500g white beans (such as cannellini or navy beans), soaked overnight
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika (sweet or hot, depending on preference)
  • 1 teaspoon ground black pepper
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 2 bay leaves
  • 1 liter water or vegetable broth
  • Fresh parsley for garnish

Instructions:

  1. Cook the Beans: Drain the soaked beans and place them in a large pot. Cover with fresh water or vegetable broth, add the bay leaves, and bring to a boil. Reduce the heat and simmer the beans until they are tender, about 1-1.5 hours. Drain the beans, reserving some of the cooking liquid.

  2. Sauté the Vegetables: In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, red and green bell peppers, and minced garlic. Sauté until the vegetables are soft and the onion is translucent, about 5-7 minutes.

  3. Add Tomato Paste and Spices: Stir in the tomato paste, paprika, black pepper, and salt. Cook for another 2-3 minutes, allowing the tomato paste to caramelize slightly and the spices to release their aromas.

  4. Combine Beans with Vegetables: Add the cooked beans to the skillet, mixing them with the sautéed vegetables. If the mixture seems too dry, add some of the reserved cooking liquid to reach your desired consistency.

  5. Bake the Dish: Preheat your oven to 180°C (350°F). Transfer the bean mixture to an oven-safe casserole dish or keep it in the skillet if it is oven-safe. Bake for about 20-30 minutes, until the top is slightly browned and the flavors are well combined.

  6. Serve: Garnish with fresh parsley and serve hot. Gravče na Tiganj is often enjoyed with bread and can be a hearty main dish or a side dish.
