Guiso de Arroz is a comforting and filling rice-based stew from Argentina, often made with a mixture of vegetables, meat, and spices. This dish is ideal for a one-pot meal, where rice absorbs the flavorful broth, creating a satisfying and hearty dish. It’s a staple in many Argentine households, especially during colder months, and is highly adaptable depending on the ingredients you have on hand.

Ingredients:

  • 250 gr rice (medium-grain or long-grain)
  • 300 gr beef or chicken, diced
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 2 carrots, diced
  • 100 gr peas
  • 400 gr canned tomatoes, chopped (or fresh)
  • 1 liter beef or chicken stock
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, and red bell pepper, and sauté until softened and fragrant.
  2. Brown the Meat: Add the diced beef or chicken to the pot and cook until browned on all sides.
  3. Add Vegetables: Stir in the diced carrots and peas, and cook for an additional 5 minutes.
  4. Season and Simmer: Add the paprika, cumin, oregano, salt, and black pepper. Stir to combine the spices with the meat and vegetables.
  5. Add Tomatoes and Stock: Pour in the canned tomatoes and stock. Stir everything together and bring to a simmer.
  6. Cook the Rice: Add the rice to the pot and stir. Lower the heat, cover, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is mostly absorbed.
  7. Serve: Once the rice is tender and the stew has thickened, remove from heat. Garnish with freshly chopped parsley and serve hot.
