Instructions:

  1. Prepare the Beef:

    • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
    • Add the beef in batches and brown on all sides. Remove the beef and set it aside.
  2. Cook the Onions:

    • In the same pot, add the chopped onions and cook until golden and soft, about 10 minutes.
    • Add the minced garlic and cook for another minute.
  3. Add Spices and Tomato Paste:

    • Stir in the paprika, hot paprika (if using), ground black pepper, caraway seeds, and dried marjoram.
    • Add the tomato paste and cook for another 2-3 minutes to allow the flavors to develop.
  4. Combine and Simmer:

    • Return the browned beef to the pot and pour in the beef broth and red wine (if using).
    • Add the bay leaves and bring the mixture to a boil, then reduce the heat to low.
    • Cover and simmer the goulash for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  5. Season and Serve:

    • Taste and adjust the seasoning with salt and more pepper if needed.
    • Serve the Gulaš hot, garnished with fresh parsley if desired. It pairs well with bread, potatoes, or pasta.
