Instructions:

  1. Prepare the Beef:

    • Skim off any foam or impurities that rise to the surface during cooking.
  3. Prepare the Vegetables:

    • Add the sliced carrots, celery, parsnips, and parsley root (if using) to the pot.
    • Continue to simmer the soup for another 30 minutes, or until the vegetables are tender.
  4. Add the Potatoes:

    • Add the diced potatoes to the pot and cook for an additional 15-20 minutes, until the potatoes are soft.
  5. Season the Soup:

    • Taste the soup and adjust the seasoning with salt and pepper as needed.
  6. Serve:

    • Remove the beef from the pot and shred or cut it into bite-sized pieces. Return the meat to the soup.
    • If using, add noodles to the soup and cook according to package instructions.
