Ingredients:

  • 1 sprig curry leaves
  • 1/2 teaspoon asafoetida (hing)
  • 1 small onion, thinly sliced (optional)
  • 2 cloves garlic, minced (optional)
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Yogurt Mixture:

    • In a large bowl, whisk together the yogurt and gram flour (besan) until smooth and lump-free.
    • Add 2 cups of water, turmeric powder, red chili powder, and salt to the yogurt mixture. Mix well to combine.
  2. Cook the Kadhi:

    • Pour the yogurt mixture into a large pot and bring it to a boil over medium heat, stirring continuously to prevent curdling.
    • Once it comes to a boil, reduce the heat and let it simmer for 20-25 minutes, stirring occasionally. The kadhi will thicken as it cooks.
  3. Prepare the Tempering (Tadka):

    • In a small pan, heat the oil or ghee over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
    • Add fenugreek seeds, dried red chilies, curry leaves, and asafoetida. Sauté for a few seconds.
    • If using onions and garlic, add them now and sauté until the onions are golden brown.
  4. Combine and Garnish:

    • Pour the prepared tempering over the simmering kadhi. Mix well and cook for an additional 5 minutes to allow the flavors to meld.
    • Garnish with fresh coriander leaves.
  5. Serve:

    • Serve the kadhi hot with steamed rice or roti.
