Kelj Čorba A hearty soup made with savoy cabbage, potatoes, and smoked sausage
Kelj Čorba, or Kale Soup, is a traditional Serbian dish that is both nutritious and comforting. Kale, a leafy green vegetable rich in vitamins and minerals, is the star of this soup. The dish typically includes potatoes, carrots, and sometimes smoked meat, which adds a savory depth to the flavor. Kelj Čorba is often enjoyed as a warming first course, especially during the colder months, but it can also be served as a light main course.
Ingredients:
- 1 tablespoon oil (sunflower or olive)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 3-4 potatoes, peeled and diced
- 1 bunch kale (about 300g), stems removed and leaves chopped
- 1 liter vegetable or chicken broth
- 1 bay leaf
- Salt and pepper to taste
- 100g smoked sausage or bacon (optional, for added flavor)
- 1 tablespoon flour (optional, for thickening)
- 1/2 cup sour cream or yogurt (optional, for serving)
Instructions:
Prepare the Ingredients:
- Wash the kale thoroughly, remove the tough stems, and chop the leaves into bite-sized pieces. Set aside. Dice the potatoes and slice the carrots.
Sauté the Vegetables:
- In a large pot, heat the oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 5 minutes.
Add the Vegetables and Broth:
- Add the sliced carrots and diced potatoes to the pot. Stir to combine, then pour in the broth. Add the bay leaf and bring the mixture to a boil.
Cook the Kale:
- Once the soup is boiling, add the chopped kale. Reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
Add Smoked Meat (Optional):
- If using smoked sausage or bacon, add it to the pot during the last 10 minutes of cooking to allow the flavors to meld.
Thicken the Soup (Optional):
- If you prefer a thicker soup, you can mix the flour with a little water to create a slurry and stir it into the soup. Let it cook for an additional 5 minutes.
Season and Serve:
- Season the soup with salt and pepper to taste. Serve hot, with a dollop of sour cream or yogurt on top if desired.
