  • 1/2 cup sour cream or yogurt (optional, for serving)

Instructions:

  1. Prepare the Ingredients:

    • Wash the kale thoroughly, remove the tough stems, and chop the leaves into bite-sized pieces. Set aside. Dice the potatoes and slice the carrots.
  2. Sauté the Vegetables:

    • In a large pot, heat the oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant, about 5 minutes.
  3. Add the Vegetables and Broth:

    • Add the sliced carrots and diced potatoes to the pot. Stir to combine, then pour in the broth. Add the bay leaf and bring the mixture to a boil.
  4. Cook the Kale:

    • Once the soup is boiling, add the chopped kale. Reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
  5. Add Smoked Meat (Optional):

    • If using smoked sausage or bacon, add it to the pot during the last 10 minutes of cooking to allow the flavors to meld.
  6. Thicken the Soup (Optional):

    • If you prefer a thicker soup, you can mix the flour with a little water to create a slurry and stir it into the soup. Let it cook for an additional 5 minutes.
  7. Season and Serve:

    • Season the soup with salt and pepper to taste. Serve hot, with a dollop of sour cream or yogurt on top if desired.
