Krempita A creamy custard slice with a delicate puff pastry base, topped with powdered sugar

Krempita is a traditional Serbian dessert known for its light and creamy texture. This layered dessert consists of a delicate puff pastry filled with a rich, custard-like cream. It is often dusted with powdered sugar and served chilled. Krempita is a popular treat in Serbia and other parts of the Balkans, enjoyed for its smooth and velvety filling that contrasts perfectly with the crispiness of the pastry. This dessert is a favorite at celebrations and family gatherings, bringing a touch of sweetness and indulgence to any occasion.

Ingredients:

  • 500g puff pastry
  • 1 liter milk
  • 200g sugar
  • 100g all-purpose flour
  • 6 large eggs
  • 1 tablespoon vanilla extract
  • Powdered sugar for dusting

Instructions:

  1. Prepare the Puff Pastry:

    • Preheat your oven to 200°C (390°F).
    • Roll out the puff pastry on a lightly floured surface to a thickness of about 3mm.
    • Cut the pastry into two equal rectangles to fit the size of your baking dish.
    • Place the pastry on a baking sheet lined with parchment paper and prick it all over with a fork to prevent it from puffing too much.
    • Bake for about 15-20 minutes or until golden brown and crisp. Set aside to cool.
  2. Make the Cream Filling:

    • Separate the egg yolks from the whites. In a large bowl, whisk together the egg yolks and sugar until pale and creamy.
    • Gradually add the flour and mix until smooth.
    • In a large saucepan, heat the milk until it begins to simmer. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
    • Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble.
    • Remove from heat and stir in the vanilla extract.
    • In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the warm custard mixture until well combined.
  3. Assemble the Krempita:

    • Place one sheet of the baked puff pastry at the bottom of your baking dish.
    • Pour the custard filling over the pastry, spreading it evenly.
    • Place the second sheet of puff pastry on top, gently pressing it down.
    • Refrigerate the Krempita for at least 4 hours or until fully set.
  4. Serve:

    • Before serving, dust the top with powdered sugar.
    • Cut into squares and serve chilled.
