- A pinch of saffron strands (optional)
- 2 tbsp warm milk (optional, for saffron infusion)
Instructions:
Prepare the Saffron (Optional):
- If using saffron, soak the strands in warm milk for about 10 minutes to release the color and flavor.
Roast the Gram Flour:
- Heat ghee in a heavy-bottomed pan over low heat.
- Add the gram flour (besan) to the pan and roast it slowly, stirring continuously.
- Roast until the flour turns golden brown and emits a nutty aroma. This should take about 15-20 minutes. Ensure you stir constantly to avoid burning.
Add Nuts and Saffron (Optional):
- Add the finely chopped nuts to the mixture and continue roasting for another 2-3 minutes.
- If using saffron, pour in the saffron-infused milk and mix well.
Mix in the Sugar:
- Turn off the heat and let the mixture cool slightly, but not completely.
- Once the mixture is warm (not hot), add the powdered sugar and cardamom powder. Mix thoroughly until the sugar is well incorporated.
Form the Ladoos:
- While the mixture is still warm, take small portions and roll them into round balls using your hands.
- If the mixture is too dry, you can add a little more warm ghee to help bind it together.
Cool and Serve:
- Allow the ladoos to cool completely before serving or storing them in an airtight container.
