Lengua a la Vinagreta is a traditional Argentine appetizer made from tender, thinly sliced beef tongue marinated in a tangy vinaigrette. It’s often served cold and is a favorite at Argentine gatherings, especially during asados (barbecues) and festive meals. The vinaigrette, usually made with vinegar, olive oil, and herbs, gives the beef tongue a refreshing and zesty flavor. It’s typically served as part of a cold appetizer spread, accompanied by bread or crackers.
Ingredients:
- 1 whole beef tongue (around 1.5-2 kg)
- 1 large onion, chopped
- 2 garlic cloves, minced
- ½ cup red wine vinegar
- ⅓ cup olive oil
- 1 tablespoon Dijon mustard (optional)
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Cook the beef tongue: In a large pot, cover the beef tongue with water, add a pinch of salt, and bring to a boil. Reduce the heat and simmer for about 2-3 hours, or until the tongue is tender when pierced with a fork. Once done, remove it from the pot and let it cool.
Peel the tongue: Once the tongue is cool enough to handle, peel off the outer layer of skin. It should come off easily. Slice the beef tongue into thin slices and set aside.
Make the vinaigrette: In a bowl, whisk together the vinegar, olive oil, minced garlic, Dijon mustard (if using), paprika, oregano, salt, and pepper until well combined.
Marinate the tongue: Arrange the thinly sliced tongue in a shallow dish and pour the vinaigrette over the top. Make sure all the slices are coated with the marinade. Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.
Serve: Garnish with chopped fresh parsley before serving. Lengua a la Vinagreta is best served cold as an appetizer with bread or crackers.
