Locro is a traditional Argentine stew, typically served on national holidays, particularly on May 25th (Argentina’s Revolution Day). This rich and hearty dish is made with hominy (corn), beans, beef, pork, and sometimes sausage, along with flavorful spices. Originating from the Andean regions, Locro is a comforting dish, perfect for cold weather, symbolizing the unity and warmth of Argentine culture.


Ingredients:

  • 1 cup dried white hominy (maize) or dried white corn
  • 1 cup dried white beans (such as cannellini or navy beans)
  • 500g beef stew meat (cut into cubes)
  • 250g pork belly (cut into small pieces)
  • 2 chorizo sausages (sliced)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 large potato (diced)
  • 1 large sweet potato (diced)
  • 1 red bell pepper (chopped)
  • 2 bay leaves
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper (to taste)
  • 6-8 cups water or beef broth
  • 2 tbsp olive oil

For Garnish:

  • 2 spring onions (chopped)
  • Chili flakes or spicy chimichurri (optional)

Instructions:

  1. Soak the hominy and beans: Soak the dried hominy and beans separately overnight or for at least 8 hours. Drain and rinse before using.

  2. Cook the base: In a large pot, heat olive oil over medium heat. Add the onions, garlic, and bell pepper, sautéing until soft and fragrant, about 5 minutes.

  3. Brown the meat: Add the beef stew meat, pork belly, and sliced chorizo to the pot. Brown the meat for about 10 minutes, stirring occasionally.

  4. Add seasonings: Stir in the paprika, cumin, bay leaves, salt, and pepper, cooking for another minute to release the flavors.

  5. Simmer the stew: Add the soaked hominy, beans, diced potato, and sweet potato to the pot. Pour in enough water or beef broth to cover all the ingredients. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 2-3 hours, stirring occasionally until the hominy and beans are tender and the stew is thickened.

  6. Final touches: Adjust the seasoning with more salt, pepper, or spices to taste. If you prefer a spicier stew, add chili flakes or spicy chimichurri.

  7. Garnish and serve: Serve the Locro hot, garnished with chopped spring onions and an optional drizzle of spicy chimichurri. It pairs wonderfully with crusty bread or a simple side salad.
