Ingredients:

  • 1 kg beef matambre (flank steak)
  • 1 liter milk
  • 3 garlic cloves, minced
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 1 tablespoon mustard
  • 1 tablespoon butter

Instructions:

  1. Prepare the Meat:

    • Trim excess fat from the matambre. Season both sides with salt, pepper, and paprika.
  2. Brown the Meat:

    • In a large pan, heat olive oil over medium heat. Sear the matambre on both sides until browned, about 3-4 minutes per side. Remove from the pan and set aside.
  3. Cook the Onions:

    • In the same pan, add the butter and sliced onions. Sauté until the onions are soft and translucent, about 5 minutes.
  4. Add the Milk and Aromatics:

    • Add the minced garlic, bay leaves, oregano, and mustard to the pan with the onions. Pour in the milk and stir to combine.
  5. Cook the Matambre:

    • Place the seared matambre back into the pan, ensuring it’s submerged in the milk. Cover and cook over low heat for 1.5 to 2 hours, or until the meat is tender and infused with the milk flavors. Stir occasionally to prevent sticking.
  6. Reduce the Sauce:

    • Once the meat is tender, remove it from the pan. Increase the heat to medium and allow the milk sauce to reduce until thickened, stirring frequently.
  7. Serve:

    • Slice the matambre and serve with the milk sauce drizzled over it. Pair with roasted vegetables or potatoes for a complete meal.
