Matambre a la Pizza This dish consists of thin slices of flank steak (matambre), grilled and topped with tomato sauce, melted mozzarella cheese, and herbs, resembling a pizza, but with a meat base instead of dough

Matambre a la Pizza is a popular Argentine dish where thin slices of flank steak (matambre) are used as the base instead of pizza dough. The grilled steak is topped with tomato sauce, melted mozzarella cheese, and herbs, giving it a pizza-like appearance but with the hearty taste of grilled beef. This dish brings together the best of Argentine barbecue (asado) and Italian influence, creating a protein-packed, cheesy meal that’s both unique and satisfying.

Ingredients:

  • 1½ lbs flank steak (matambre)
  • 1 cup tomato sauce (preferably homemade or Italian-style)
  • 1½ cups mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp red chili flakes (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)

Instructions:

  1. Prepare the steak: Trim any excess fat from the flank steak and tenderize it by pounding with a meat mallet. Season with salt, pepper, and minced garlic, then let it sit for about 10 minutes to absorb the flavors.

  2. Grill the steak: Heat your grill to medium-high heat. Drizzle olive oil on the steak and grill it for 5-6 minutes per side, until it’s charred and cooked through. You can also grill it to your preferred doneness (medium is common for this dish).

  3. Preheat the oven: Set your oven to broil mode (or 450°F if using a regular bake mode).

  4. Assemble the “pizza”: Once the steak is grilled, transfer it to an oven-safe baking sheet. Spread the tomato sauce evenly over the steak, then top it with shredded mozzarella cheese, oregano, and red chili flakes (if using).

  5. Broil to melt the cheese: Place the steak under the broiler for 3-5 minutes, or until the cheese is fully melted and bubbly, with slight browning on top.

  6. Garnish and serve: Remove from the oven, garnish with fresh basil leaves, and slice the steak into pieces as you would pizza. Serve immediately.
