Methi Thepla A Gujarati flatbread made with fenugreek leaves (methi) and spices, typically enjoyed with yogurt or pickles

Methi Thepla is a traditional Gujarati flatbread that is packed with the goodness of fenugreek leaves (methi). It is a versatile dish that can be enjoyed at any time of the day—breakfast, lunch, dinner, or as a snack. Thepla is usually served with yogurt, pickles, or a side of vegetables, making it a wholesome and satisfying meal. The addition of fenugreek leaves not only adds flavor but also brings in nutritional benefits, making it a popular choice for a healthy diet.

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup fresh fenugreek leaves, finely chopped
  • 2 tbsp yogurt
  • 1 tsp ginger-green chili paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp carom seeds (ajwain)
  • 1 tbsp sesame seeds
  • 2 tbsp oil (for dough)
  • Salt to taste
  • Water, as needed for kneading
  • Oil or ghee for cooking

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, combine the whole wheat flour, chopped fenugreek leaves, ginger-green chili paste, cumin seeds, turmeric powder, red chili powder, carom seeds, sesame seeds, salt, and yogurt.
    • Add 2 tablespoons of oil and mix well.
    • Gradually add water and knead the mixture into a soft, smooth dough. The dough should be pliable and not too sticky.
    • Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  2. Roll the Thepla:

    • Divide the dough into equal-sized balls.
    • Roll each ball into a small disc, dusting with flour as needed to prevent sticking.
    • Using a rolling pin, roll out each disc into a thin, round flatbread (about 6-7 inches in diameter).
  3. Cook the Thepla:

    • Heat a tawa or griddle over medium heat.
    • Place the rolled thepla on the hot tawa and cook for about 1-2 minutes on one side, or until bubbles start to appear.
    • Flip the thepla and apply a little oil or ghee on the cooked side.
    • Press gently with a spatula and cook the other side until golden brown spots appear.
    • Flip again and cook the first side with oil or ghee until both sides are well-cooked and golden.
  4. Serve:

    • Serve hot with yogurt, pickles, or your favorite chutney.
