Milanesa de Berenjena is a vegetarian version of the classic Argentine “milanesa,” where thin slices of eggplant are breaded and fried until crispy on the outside and tender on the inside. Ingredients:

  • 2 large eggplants
  • 2 cups breadcrumbs

  • Salt and pepper (to taste)

Instructions:

  1. Prepare the eggplants: Wash and peel the eggplants. Slice them into thin rounds (about 1/4 inch thick). Sprinkle the slices with salt and let them sit for 20 minutes to remove excess moisture and bitterness. Afterward, pat them dry with a paper towel.

  2. Set up the coating station: Prepare three bowls—one with flour, one with beaten eggs, and one with breadcrumbs mixed with paprika, garlic powder, oregano, salt, and pepper.

  3. Coat the eggplant slices: Dredge each eggplant slice in the flour, dip it in the beaten eggs, and then coat it with the seasoned breadcrumbs. Press the breadcrumbs gently to ensure they stick well to the eggplant.

  4. Fry the eggplants: Heat a generous amount of oil in a large frying pan over medium heat. Fry the eggplant slices in batches, cooking each side for about 3-4 minutes or until golden brown and crispy. Remove the slices from the oil and place them on a plate lined with paper towels to absorb any excess oil.
