  • 2-3 tablespoons vegetable oil or lard
  • 2-3 cups (500-750ml) chicken broth or water
  • 1 bay leaf
  • 2-3 medium potatoes, chopped (optional)
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:

    • Heat the vegetable oil or lard in a large pot or Dutch oven over medium heat. Add the chopped onions and cook until they become soft and translucent, about 5-7 minutes.
    • Stir in the minced garlic and sweet paprika, cooking for another minute to release the flavors. Be careful not to burn the paprika as it can become bitter.
  2. Cook the Chicken:

    • Add the chicken pieces to the pot, browning them slightly on all sides. This helps to seal in the juices and adds depth to the flavor of the stew.
  3. Add Vegetables:

    • Stir in the chopped bell peppers and tomatoes. If using potatoes, add them at this stage as well. Cook for a few minutes, allowing the vegetables to soften slightly.

    • Pour in the chicken broth or water, ensuring the chicken and vegetables are covered. Add the bay leaf, and season with salt and pepper to taste. Bring the stew to a gentle boil, then reduce the heat to low. Cover the pot and let the Paprikaš simmer for about 45 minutes to 1 hour, or until the chicken is tender and fully cooked, and the flavors have melded together.
  5. Optional Thickening:

    • If you prefer a thicker stew, mix the flour with a small amount of cold water to create a slurry, then stir it into the Paprikaš during the last 10 minutes of cooking. Continue to cook until the stew thickens to your desired consistency.
  6. Serve:

    • Garnish with freshly chopped parsley and serve the Paprikaš hot with fresh bread, dumplings, or a side of rice.
