Pastrmka Grilled or fried trout, often served with potatoes and a garlic sauce
Pastrmka, or trout, is a popular dish in Serbian and Balkan cuisine, celebrated for its delicate flavor and tender texture. Typically, the fish is simply prepared to highlight its natural taste, often grilled or baked with minimal seasoning. It’s a dish that is both light and satisfying, commonly served with a side of potatoes, vegetables, or a fresh salad. Pastrmka is particularly enjoyed in regions near rivers and lakes, where freshwater trout is abundant. It’s known for being a healthy option, rich in protein and beneficial omega-3 fatty acids.
Ingredients:
- 2 whole trout, cleaned and scaled (about 300g each)
- 2 tablespoons olive oil
- 1 lemon, sliced
- 2 cloves garlic, minced
- Fresh herbs (such as parsley, thyme, or dill)
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
Preheat the Oven: Preheat your oven to 200°C (390°F) if baking, or preheat a grill to medium-high heat if grilling.
Prepare the Trout: Rinse the trout under cold water and pat dry with paper towels. Make a few shallow cuts on each side of the fish to help it cook evenly.
Season the Trout: Drizzle olive oil over the trout, both inside and out. Season generously with salt and pepper. Stuff the cavity of each trout with lemon slices, minced garlic, and fresh herbs.
Cook the Trout:
- For Baking: Place the trout on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- For Grilling: Place the trout on the grill, and cook for about 5-7 minutes per side, depending on the size of the fish, until the skin is crispy and the flesh is opaque and flakes easily.
Serve: Serve the pastrmka hot, garnished with fresh lemon wedges and additional herbs. It pairs well with roasted potatoes, steamed vegetables, or a simple green salad.
