Ingredients:

  • 1 lb (450g) dried white beans (such as navy or cannellini beans)

  • 2 bay leaves
  • 1 tablespoon paprika (sweet or smoked)

Instructions:

  1. Prepare the Beans:

    • Rinse the dried beans under cold water and soak them overnight in a large bowl with plenty of water.
    • The next day, drain and rinse the beans again before using.
  2. Cook the Beans:

    • In a large pot, add the soaked beans, water or vegetable broth, and bay leaves.
    • Bring to a boil, then reduce the heat and simmer for 45-60 minutes, or until the beans are tender.
  3. Prepare the Sausage/Bacon:

    • In a separate pan, heat the oil over medium heat.
    • Add the chopped onion, garlic, and carrots, cooking until the onion becomes translucent.
    • Add the smoked sausage or bacon, and cook until the meat is browned.
  4. Combine and Season:

    • Add the cooked sausage/bacon mixture to the pot with the beans.
    • Stir in the paprika, ground black pepper, and dried thyme.
    • Simmer the soup for another 20-30 minutes, allowing the flavors to meld together.
  5. Thicken the Soup (Optional):

    • If you prefer a thicker consistency, you can create a roux by mixing the flour with a small amount of oil and stirring it into the soup. Cook for an additional 10 minutes until the soup thickens.
  6. Serve:

    • Adjust seasoning with salt and more pepper if needed.
    • Garnish with fresh parsley and serve hot with bread or pickled vegetables.
