Pečeni Krompir, or roasted potatoes, is a beloved side dish in Serbian cuisine and across the world. Ingredients:

  • 1 kg (2.2 lbs) potatoes (Yukon Gold or another roasting variety)
  • 2-3 tablespoons olive oil or sunflower oil
  • 1-2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • Fresh or dried rosemary or thyme (optional)
  • 4-5 garlic cloves, crushed (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 200°C (400°F).
  2. Prepare the Potatoes:

    • Wash the potatoes thoroughly. You can peel them or leave the skins on, depending on your preference.
    • Cut the potatoes into even-sized chunks or wedges for even roasting.
  3. Season the Potatoes:

    • Place the potatoes in a large mixing bowl.
    • Drizzle the olive oil over the potatoes, then sprinkle with salt, pepper, paprika (if using), and rosemary or thyme. Toss the potatoes to ensure they are evenly coated with the oil and seasonings.
  4. Roast the Potatoes:

    • Spread the seasoned potatoes in a single layer on a baking sheet. If desired, scatter the crushed garlic cloves among the potatoes.
    • Roast in the preheated oven for 30-40 minutes, turning the potatoes halfway through to ensure they cook evenly.
    • The potatoes are done when they are golden brown and crispy on the outside and tender on the inside.
  5. Serve:

    • Serve the roasted potatoes hot, garnished with fresh herbs if desired.
