Peda A semi-soft, fudge-like sweet made from khoya (reduced milk) and flavored with cardamom

Peda is a traditional Indian sweet made from condensed milk and milk solids, often flavored with cardamom and garnished with nuts. It’s a rich, fudge-like dessert that’s dense and sweet, typically enjoyed during festivals like Diwali or Holi. The preparation involves cooking the milk solids until they form a thick, dense mixture, which is then shaped into small discs or balls.

Ingredients:

  • 1 cup khoya (milk solids)
  • 1/2 cup condensed milk
  • 1/4 cup milk
  • 1/4 tsp cardamom powder
  • 2 tbsp ghee (clarified butter)
  • Chopped nuts (pistachios, almonds, or cashews) for garnish

Instructions:

  1. Prepare the Pan: Grease a plate or tray with a little ghee and set it aside.

  2. Cook the Khoya: In a non-stick pan, heat the ghee over medium heat. Add the khoya and cook, stirring constantly, until it starts to melt and become soft. This should take about 5 minutes.

  3. Add Condensed Milk and Milk: Add the condensed milk and milk to the pan. Continue to cook the mixture on medium heat, stirring frequently, until it thickens and starts to pull away from the sides of the pan. This will take about 10-15 minutes.

  4. Flavor with Cardamom: Once the mixture has thickened and becomes a mass, add the cardamom powder and mix well.

  5. Shape the Peda: Remove the mixture from the heat and let it cool slightly. While still warm but manageable, shape the mixture into small discs or balls using your hands. You can also use a spoon to form them.

  6. Garnish: Press a piece of chopped nut into the center of each peda.

  7. Cool and Serve: Allow the pedas to cool completely. They will firm up as they cool. Store in an airtight container and serve at room temperature.
